Kosher recipe: Sweet Beginings - Apple & Pomegranate Salad

Ingredients
(Yields: 5-7 servings)
Salad:
3 Macintosh Apples
½ Pomegranate
1 Pkg. Mint leaves
2 Tbsp. Honey
¼ tsp. Lemon juice
(optional - to prevent oxidization)
Dressing:
4 Tbsp. Mayonnaise
¼ Tbsp. Curry
Pinch of Cinnamon
Pinch of Nutmeg
Pinch of Turmeric
1 Tbsp. Water
Directions:
1) Wash and remove the seeds of half the pomegranate. Set aside in a separate bowl.
2) Wash, core and half the apples. Slice thinly and set aside in a separate bowl. Add lemon juice and honey. Mix well, but gently!
3) In a separate bowl, add the mayonnaise, curry, cinnamon, nutmeg, turmeric. Mix well. Then add the water to thin the dressing.
Plating:
1) Carefully, stack the apple slices in a tower.
2) Gently pour dressing over the stack until it touches the plate
(approximately 1 Tbsp.)
3) Sprinkle pomegranate seeds on top and on the sides.
4) Add the mint leaf as a garnish!
For extra flare, add radicchio or Boston lettuce on the side!
