Baked Rice with Ground Beef & eggplant

I love dishes that combine several ingredients that make a whole meal. Such are the stews that contain meat, poultry, vegetables, fish, rice, wheat and a variety of tasty ingredients.
I decided to mix rice with ground beef, add roasted eggplant and some mini carrots and bake it in the oven. The flavor mix was amazing. I decided to share the recipe so everyone could enjoy it this coming Weekend.
Baked Rice with Ground Beef & eggplant
Ingredients:
1 Cup white rice- cooked for 10 minutes
1 Eggplant
500g ground beef
6 carrots, peeled and cut into matchsticks
1 Whole Garlic
4 Crushed Garlic cloves
1/2 Cup chopped dill
1 Teaspoon Red Paprika
Salt
Black pepper
1 Cup Vegetable broth
Boiling water
Olive oil for frying
Preparation:
- On a large pan fry the carrot and place on a large baking dish.
- Place a whole garlic in the center.
- Roast the eggplant.
- On the same pan the carrots were fried in, fry the meat, rice, two of the garlic cloves and stir, add the spices and salt and after 5 minutes turn off the flame.
- Add the contents of the eggplant and dill into the pan, pure the whole mixture over the carrots, and stir lightly.
- Pour the vegetable stock over the mixture, fill the pan with water to the height of the mixture and add 1 inch.
- Preheat the oven to 350 degrees.
- Cover the dish with aluminum foil and bake for 40 minutes.
- Remove the paper and continue baking another 20 minutes.
